The Brew Works only ‘brews’ the best!

Our new coffee blend is the result of partnerships that develop a line from the birth of the bean to the smiles our our guests. The line runs from Fegley’s Brew Works through the Cosmic Cup (our roaster) back to Hacienda El Roble, a sustainable coffee farm in Los Santos, Colombia.

Fegley’s Brew Works is proud to use Mesa de los Santos beans for our house blend. Mesa is grown on Hacienda El Roble, an organic coffee estate in the Santander province of Colombia. In partnership with our roaster, Troy Reynard, of the Cosmic Cup in Easton we have formed this direct relationship between the coffee we serve and the people who grow and harvest the coffee.

Oswaldo Acevedo, owner of El Roble, is an innovator in both the quality of his coffee and the sustainability of his practices. Our Mesa Blend is a mix of carefully chosen coffee varietals, including Typica, Bourbon and Caturra, all uniquely suited to microclimate at El Roble. Our Mesa Blend is characterized by its smooth, sweet flavor, highlighted with hints of tropical fruit and chocolate.

The farm is Rainforest Alliance certified, which ensures our Mesa Blend conserves biodiversity and ensures sustainable livelihoods at origin. 168 species of birds can be found inside Hacienda El Roble, and the farm helps support a K-12 school that serves the entire Los Santos region. Growers and harvesters are paid above-average wages, enjoy good working conditions and have access to healthcare.

Common Questions Answered:

Is your new blend Fair Trade?

Our coffee is beyond Fair Trade. We have a direct relationship with the farm, which pays fair wages to its workers. Independent farms are not allowed to participate in the Fair Trade system. Only large cooperatives of hundreds or thousands of small farms are allowed to participate in the Fair Trade system. It’s hard to control quality and consistency on such a large scale. But we wanted to have a relationship with a single farm, so we could personally witness and participate in the sustainability and quality that happens at Hacienda El Roble. El Roble is also certified by Rainforest Alliance, which is a third-party that guarantees that the farm is socially and environmentally responsible.

We have decided to go beyond Fair Trade, ultimately, because we found that the Mesa coffee from El Roble was better. Through our relationship with El Roble and the farm’s Rainforest Alliance certification, we know that their workers are paid fairly and have access to education and health care.

Have you been to the farm?

Troy Reynard, our roaster, visited the farm this past January in part to create a relationship coffee blend for Fegley’s Brew Works. Troy will visit El Roble on an ongoing annual basis, to consult with the growers on quality and participate in development projects in the Los Santos region. Fegley’s Brew Works, by buying this coffee, is an active participant in this process.

Why did you change your blend?

The difference is night and day! We find our new Mesa Blend sweeter and smoother than our old blend. Troy has been developing blends and roasts with El Roble for 6 years. The growers are extremely meticulous in how they cultivate, harvest and process their coffee, and if you give it a chance, you will definitely taste it in the cup.

Is your coffee still organic? Is it shade grown?

Our Mesa Blend is certified organic, shade grown and bird friendly. The coffee trees are cultivated under a dense forest canopy, and is certified organic by BCS OKO-Garantie, a leading international certifier. El Roble is a habitat for over 120 varieties of migratory birds.

Brew Works Sweet Potato & Jalapeño Corn Chowder

2 sweet potatoes (2 cups)
½ cup finely diced onion
2 tbls. butter
1 quart chicken stock
2 cups corn (fresh or frozen)
2 teaspoons diced jalapenos
½ cup heavy cream
1 teaspoon salt
1 teaspoon black pepper
½ cup chopped green onion
½ lb. bacon

Peel sweet potatoes and cut into large chunks. Boil until soft. When cool, place in blender and pulse briefly to purée.

Dice bacon, then render it down until its nice and crisp. Save ½ of the drippings, and add it to the butter.

Sautee the onions in butter until done. Add sweet potatoes and stock. Bring to a boil, reducing liquid slightly.

Add corn, jalapeños, heavy cream, and salt. Simmer for five minutes, garnish with green onions and serve.

Hop'Solutely a well-rounded ale

Friday, January 29, 2010

"He that buys land buys many stones; he that buys
flesh buys many bones; he that buys eggs buys many shells,
but he that buys good ale buys nothing else."

-- John Ray

Beer: Hop'solutelyMade by: Fegley's Brew Works;
Allentown

Since opening in April 1998, Brew Works has only ever
bottled a pair of seasonal beers, Rude Elf's Reserve
and its pumpkin ale. And that work was done on a contract
basis through another brewery.

The demand and brand familiarity weren't quite there
to justify expanding the bottled options, but a growing
craft beer market in and around Philadelphia helped open the
door, according to Jeff Fegley, president and partner in the
Allentown and Bethlehem Brew Works.

"There's really an opening there that wasn't
there before," he said.

Hop'Solutely marks the first beer brewed and bottled
entirely by the family-owned brewery and will be followed
shortly by a new seasonal bottled offering, Insidious
Imperial Stout.

Brew Works decided to expand its bottled offerings after
signing on with the Lehigh Valley IronPigs and Coca-Cola
Park, which represented the brewery's first major
account outside the brewpubs, Fegley said.

"That's when we saw the first real value in brand
marketing," he said.

In recent years, demand for craft beers in Philadelphia has
blossomed with taps changing continually as drinkers demand
the newest microbrew offerings, according to Fegley.

Brew Works is bottling out of its Allentown location with a
bottling line that it purchased from a defunct brewery
before the new brewpub even opened. Emmaus-based
Shangy's serves as Brew Works' distributor for the
Philadelphia area, and the bottled beers are available in 44
establishments locally and in the Southeast and Northeast.

Insidious is bottled and awaiting labels for distribution
in about two weeks as a winter seasonal. Next up is
Bagpiper's Scotch Ale, winner of a bronze medal at the
2008 Great American Beer Festival in Denver and a silver at
last year's event.

Fegley said Scotch Ale will be a year-round beer set to
debut this spring. Brew Works plans to bottle as many as
four new seasonals this year, including some type of wit and
a lambic, he said.

Web site: thebrewworks.comType of beer: India Pale Ale

British pale ales brewed for the Indian Empire were
reportedly made with a higher strength and more hops to
protect them on the long journey.

Rating: 4 pints out of 5Beer review: Hop'Solutely
comes in a 25-ounce cork and cage bottle. It's more of
a copper-colored beer with, of course, a hoppy aroma,
although not quite as hoppy as I expected.

There seems to be a particularly floral nose underneath the
hoppiness, which is, in fact, a really nice undertone.

The aroma surprised me and the flavor surprised me even
more. A fan of big bold IPAs, I was anticipating a hoppy
explosion of sorts, considering the sheer hoppiness of Brew
Works' Hop Explosion IPA, which packs a bitter punch.

Hop'solutely, on the other hand, is more subtle. It
has a softer edge on the palate with not as much aftertaste
as one might expect from a bottle-conditioned triple IPA
weighing in at 11.5 percent ABV. The bitterness is quite
mellow with perhaps just even a touch of maltiness.

This could be an interesting option for someone on the
fence about IPAs or even IPA training wheels for the
uninitiated.

Those same floral notes seem to be drifting underneath the
flavor. Does it even offer up just a touch of citrus?
I've read where brewers indicate a beer offers hints of
grapefruit. If you have a hoppy beer with a touch of
bitterness, does that qualify as grapefruit?

Anyway, I liked it because of the balance. While I normally
enjoy and embrace a much hoppier beer with more of bitter
edge, this was a nice well-rounded beer with full body and
flavor and a touch of bitterness to make it eminently
drinkable.

Insidious is bottled and awaiting labels for distribution in about two weeks as a winter seasonal. Next up is Bagpiper’s Scotch Ale, winner of a bronze medal at the 2008 Great American Beer Festival in Denver and a silver at last year’s event.

Fegley said Scotch Ale will be a year-round beer set to debut this spring. Brew Works plans to bottle as many as four new seasonals this year, including some type of wit and a lambic, he said.

Web site: thebrewworks.comType of beer: India Pale Ale

British pale ales brewed for the Indian Empire were reportedly made with a higher strength and more hops to protect them on the long journey.

Rating: 4 pints out of 5Beer review: Hop’Solutely comes in a 25-ounce cork and cage bottle. It’s more of a copper-colored beer with, of course, a hoppy aroma, although not quite as hoppy as I expected.

There seems to be a particularly floral nose underneath the hoppiness, which is, in fact, a really nice undertone.

The aroma surprised me and the flavor surprised me even more. A fan of big bold IPAs, I was anticipating a hoppy explosion of sorts, considering the sheer hoppiness of Brew Works’ Hop Explosion IPA, which packs a bitter punch.

Hop’solutely, on the other hand, is more subtle. It has a softer edge on the palate with not as much aftertaste as one might expect from a bottle-conditioned triple IPA weighing in at 11.5 percent ABV. The bitterness is quite mellow with perhaps just even a touch of maltiness.

This could be an interesting option for someone on the fence about IPAs or even IPA training wheels for the uninitiated.

Those same floral notes seem to be drifting underneath the flavor. Does it even offer up just a touch of citrus? I’ve read where brewers indicate a beer offers hints of grapefruit. If you have a hoppy beer with a touch of bitterness, does that qualify as grapefruit?

Anyway, I liked it because of the balance. While I normally enjoy and embrace a much hoppier beer with more of bitter edge, this was a nice well-rounded beer with full body and flavor and a touch of bitterness to make it eminently drinkable.

Ed Sieger’s column of beer reviews and local beer news appears every two weeks in EXPOSED. He can be reached at 610-258-7171 or by e-mail at esieger@express-times.com.

The Bethlehem Brew Works is proud to release our latest “Masterpiece” in the Brew Works long list of fine Pale Ales. Our interpretation of this classic British Style uses powerfully bitter Magnum hops for a lovely initial bite. The patriotic American in us, however, couldn’t help but to dry hop a ridiculous amount of Cascade hops to bring forth a nice grapefruit aroma. Available on tap now in the Christmas City for all those who love Father Christmas, and those who love good ‘ol Santa Claus!

TICKLE ME TUESDAYS IN DECEMBER: STAND-UP COMEDY THAT JINGLES ALL THE WAY

Allentown, PA—Tickle Me Tuesdays, the Lehigh Valley’s only stand-up comedy showcase regularly featuring local talent alongside professional comics from New York & Philadelphia, will be held on the 1st and 15th of December in the Allentown Brew Works’ High Gravity Lounge. Each show features 5-6 amateur & semi-professional comics from the Lehigh Valley and beyond, and each show ends with a professional headliner.

The following is the headliner information for December:

December 1st headliner – Steve Balbier. This up-and-coming young comedian from Philadelphia has made a name for himself on the Philly scene with his unique, dry style. A teacher by day and a comic by night, Steve lets audiences know what smart teachers are really thinking when they’re dealing with dumb kids. Steve has performed throughout the greater Philly area and beyond, sometimes showing up on the popular ‘Ministry of Secret Jokes’ show among many other shows where the cool people hang out.

.

December 15th headliner – Larry DeFelice. Larry’s clean, high-energy act has been enjoyed by hundreds of audiences in venues ranging from traditional comedy clubs to church basements to banquet halls. He has been heard on Sirius/XM Satellite Radio (“New Rascals Comedy Hour” & “The Wiseguy Show”) and has been seen in a national television commercial for Circuit City Electronic Stores, as well as sketch work on NBC’s Late Night with Conan O’Brien show. Impressions of TV and movie characters fill his act, which is also peppered with his life experiences of being “on the cusp”. (Larry’s height of 4’10″ puts him “on the cusp” between “The Normals” and “The Little People”) Think, “The Sopranos meets Fantasy Island”!

Both of these shows are at 8pm on their respective dates, with doors opening at 7pm. Tickle Me Tuesdays are hosted and produced by Bethlehem-based professional comedian Ryan Hill; Fountain Hill-based comic Kate Hayes will be the guest-host for the December 1st show.

At Cooper’s Seafood House you can find some of the finest beers on 14 drafts and among a massive bottle selection. Fegley’s Brew Works is happy to be a part of it!

While in Scranton, you can find Fegley’s PUMPKIN ALE on draft and HOP’SOLUTELY and RUDE ELF’S RESERVE in bottles. Brew Master Beau Baden grew up literally across the street, went to school a block away! This became his regular haunt when it was time, and he is known to raise a glass here still!

Owned and operated by the Cooper family since 1948 Coopers has become a landmark in Scranton PA. The current location has evolved a long way from the original restaurant that used to be the passenger station of the Erie – Lackawanna Train Station and now encompasses a life sized pirate ship that houses the ships pub, the lighthouse bar, the tiki bar deck, the whale room, the train room and the private coral room.

We each hosted a President of the United States! Brew Works hosted President Barack Obama in Bethlehem and Cooper’s hosted President Bill Clinton.

ON JOY & SORROW – THE GLASS PRISM STORY

The Glass Prism rose to rock ‘n roll fame in the 1960s using the poetry of Edgar Allan Poe as the lyrics to its groovin’ progressive rock tunes, but the group’s journey to stardom was quickly snuffed out like so many bands of the time. Now the guys are back and ready to rock again!

An Official 2009 Selection of the Philadelphia Independent Film Festival and the Flint Film Festival of Flint, Michigan. From associate producer/co-writer Sarah, editor Matt Lewis, (both ALLENTOWN RESIDENTS), and producer Bob Ross (Jim Thorpe). The three filmmakers will be in attendance at the screening on Oct. 24 in the Silk Lounge.

Doors open 7, screening runs 7:30 to 8:30 pm.

The event is open to the public.

The official blogsite for the film is: onjoyandsorrow.blogspot.com

The YouTube link to the trailer is HERE.

Nineteenth century poetry and 1960s rock ‘n roll converge in the documentary-

“On Joy & Sorrow: The Glass Prism Story.”
The Glass Prism was a psychedelic band from 1960s Scranton, PA, credited with creating the first
“concept album.” The band adopted the poems of Edgar Allan Poe as the lyrics for each song on
their entire first album, “Poe Through The Glass Prism,” which was recorded and engineered by
the legendary Les Paul.

The album scored big on the Billboard and Cash Box charts and the foursome of blue-collar coal country boys found themselves riding a tidal wave of success. Despite soaring popularity, the loss of a lucrative national tour with the world-famous Blood, Sweat & Tears and the disappearance of the group’s manager stalled the Prism’s progress and halted their rise to fame.

This film chronicles their formation as the poppy teen group the El Caminos, transformation to the groovy Glass Prism, decline amid the 1970s hard rock scene and the ultimate decision to reunite and start rockin’ again with their first big concert in 40 years. The film contains in-depth interviews from the founding members, the ever-loyal fans, an Edgar Allan Poe expert, and the late Les Paul, plus footage from two live concerts the group completed during the making of the documentary.

The film takes the viewer to Scranton, Philadelphia and New York City, and from the 1960s to the present, with expert use of archival film footage and historic images of the band.

September 26th, 2009

Results are in from the world’s largest and most popular beer competition in the world - the 2009 Great American Beer Festival – and Fegley’s Allentown & Bethlehem Brew Works have won awards in two categories. Brewmaster Beau Baden produced the 2009 vintage of the Brew Works annual holiday ale, Rude Elf’s Reserve, which received the Bronze Medal in the “Herb and Spice or Chocolate Beer” category. He also recreated the Bagpiper’s Scotch Ale (which won the 2008 GABF Bronze), and this year’s production of that seasonal brought home the Silver Medal.

Great American Beer Festival medals are among the most coveted by brewers regardless of commercial size. It was a 1985 GABF gold medal that Jim Koch and the Boston Beer Company used to take Samuel Adams Boston Lager on it’s historic rise out of New England and around the globe. In its first two and a half years of operation, Fegley’s Allentown Brew Works has now won medals three years in a row (the 2007 Gold Medal in the Pro-Am category, the 2008 Bronze, and this years double prize). Baden also won for Bethlehem Brew Works in 2006 with a GABF Bronze for Berliner Weisse.

“Beer geeks notice when you keep on winning,” said a beaming Beau Baden. He had just received news from the Denver festival where 132 judges evaluated 3,308 beers to pick the best entries of 78 beer style categories, and was proud that the Fegley’s Brew Works continues its streak of wins. The company overall has medaled in every major competition entered over the past four years.

“We never entered the Rude Elf’s [Reserve] before because it’s a holiday beer and the cutoff time for entry was too early,” said Brew Works owner Jeff Fegley, “but because we’re bottling this year we already had samples aging and ready to go. And it won!” The two Brew Works GABF medals helped put Pennsylvania in the top five medal winning states at the festival. Top states to win medals this year were CO (45), CA (39), OR (22), WA (13), PA (12).

The Silver Medal Bagpiper’s Scotch Ale is currently on tap at all three Brew Works locations: in Bethlehem at 569 Main; in Allentown at 812 Hamilton; and at the new Brew Works on the Green at 3400 Tilghman (at the Allentown Municipal Golf Course).

The Bronze Medal Rude Elf’s Reserve will be available on tap in November to the public in a few weeks, as well as in bottles suitable for Christmas gifts. The bottles of the holiday ale will be at the restaurants and select distributors in the Lehigh Valley.

The Morning Call “The two candidates have agreed to meet afterwards at the Allentown Brew Works over a beer.”

Sestak, Toomey share a Brew at “beer summit”

By Alex Roarty

ALLENTOWN – They arrived at Muhlenberg College, they answered health-care questions, they spoke to reporters afterward.

And then Pat Toomey and Joe Sestak drank.

Following through on an idea meant to echo President Barack Obama’s famous “beer summit” with Henry Louis Gates Jr. and James Crowley, the two Senatorial candidates and their staffs met at Allentown Brew Works shortly after their health-care town hall. The downtown location was near Toomey’s campaign headquarters, and the bar’s relatively close quarters meant the campaign staffs, on completely different sides of the ideological spectrum were forced to mingle.

Not that that was a problem for the candidates themselves. The two shared a table for about an hour, each with a beer. The town hall had gone well, with neither candidate personally attacking the other. In fact, the two took time to compliment the other for engaging in honest, civil public discourse.

The two campaigns had mostly set up on either side of the narrow bar area. Facing away from the bar itself, the Sestak staffers sat on the left, Toomey staffers on the right.

Perhaps even more appropriately, a small group of Specter campaign members sat in the middle.
